In this research, on suitability to the Spanish green table olive of Memecik, Memeli, İzmir sofralık and Çilli olive varieties of Aegean region were studied. And the other hand in this proje the best concentration of lye solusion, duration washing, salt concentration of brine were determined.
İn the conclusion, % 1 concentration of lye solusion low, % 2.2. concentration of lye solusion high were found. The best suitable washing time was found that 24 hours. And at the effect on the fermantation of the salt concentration was determined.
