In this study, Halhalı, Egriburun and Kalembezi Cultivars from south-eastern Anatolia Region; Ayvalık yağlık and Gökçeada cultivars from the Bay area (Northern part of Aegean Region); Gemlik, Edincik Su, Karamürsel Su and Samanlı cultivars from Aegean Region were taken in hand.
The suitablity of the cultivars for black table olive processing was investigated in their respective regions and optimum harvesting times were also determined for the Aegean cultivars. The optimum harvesting times in general begin in the period between the first week and the end of November for uslu and in January for Memecik. These dates may delay to some exlent depending on weather conditions.
According to the quality criteria related to colour, taste and texture; Marmara and South-eastern Anatolia Regions (Halhalı, Eğriburun) took first and second ranks respectively. The Bay area (Ayvalık yağlık) and Aegean Region (Uslu) followed those in the quality order.
