   The study was conducted for the purpose of providing the most suitable technics for green olive pickling. Three types of fermentation container such as polyester tank, concrete basin and wooden barrel were investigated. The results indicated that the polyester tank was the best of all in providing the best quality. If necessary precautions are taken the concrete basin can be preferred because of its low cost. The wooden barrel was found to be unsuitable.
