Production of imported pepper filling material in our country which is used in green olives was investigated.
Possibilities of the production of pepper filling material which is imported from outside and used in green olives was investigated. Determined chemical ratios which is used for pepper filling material was 2-2.4 % for sodium alginate and 1-1.3 % for guargum.
Also it is possible to say that if the machines can be developed, this production can also be done in our country and will have an important contribution for our national income.
